Last minute fried rice to the rescue

Ever get to the end of a day and realize...oh crap, what's for dinner? It's because of days like those (like the one I had today) that I keep the following ingredients handy:

  • Frozen peas
  • Green onions
  • Ham slice (I buy 4 packs of these at Sam's Club and keep them in the freezer for emergency meals)
  • Eggs (we usually have these thanks to our productive hens)
  • Leftover rice (I also keep Minute Rice in the pantry as a back up)
  • Soy sauce, rice vinegar and sesame oil

Here's how to make it:
  1. Dice the ham & about 5 green onions
  2. Whisk 2 eggs in a bowl
  3. Heat the wok over medium-high heat
  4. Pour about a tablespoon of high heat oil in the bottom then add  eggs. Stir fry them quickly until they are set...consistency of scrambled eggs, remove them and set aside
  5. Pour another tablespoon oil in the pan and add the diced ham, onions & about 1/2 cup frozen peas
  6. Stir fry for about 5 minutes or until everything is warmed through
  7. Return eggs to pan and add 4-6 cups already cooked white rice
  8. Drizzle with 1/2 Tbsp rice wine vinegar, 1 1/2 Tbsp. sesame oil, and 2 Tbsp. soy sauce
  9. Mix in pan and continue to stir fry for about 8 minutes, allowing the rice to cook to crisp slightly on the bottom between stirs
My hubby loves this served with Sriracha Hot Chili Sauce (the stuff with a chicken on it). Delish! Even Little Sister can partake of this one since there's no dairy to be found.
